12 oz pasta (spaghetti or fettuccine)

1 cup creamy ricotta cheese

Zest of 1 large lemon

1/4 cup freshly squeezed lemon juice (approximately 2 lemons)

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1/2 teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1/2 cup freshly grated Parmesan cheese

Fresh basil leaves for garnish

Extra lemon zest for a finishing touch

Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Add your pasta and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the cooking water. Once cooked, drain the pasta and set aside.

      Incorporate Ricotta and Lemon: Reduce the heat to low, then gently stir in the ricotta cheese, lemon zest, and fresh lemon juice into the skillet. Mix well until you achieve a smooth and creamy consistency. If you find the sauce too thick, gradually add some of the reserved pasta water, a few tablespoons at a time, until it reaches your desired creaminess.

        Combine Pasta with Sauce: Add the drained pasta into the skillet along with the halved cherry tomatoes.
