Ingredients

8 ounces elbow macaroni

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 can (4 ounces) diced green chilies, drained

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

1/2 cup breadcrumbs (optional, for topping)

Cooking spray or extra olive oil (for greasing)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the elbow macaroni and cook according to package instructions until al dente. Once done, drain the pasta and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes. Then, add the minced garlic to the skillet, stirring for an additional minute until it becomes fragrant.

Combine Greens and Cream: Stir in the drained diced green chilies, heavy cream, shredded sharp cheddar cheese, and softened cream cheese into the skillet. Reduce the heat to low and cook, stirring continuously, until the cheeses are fully melted and the mixture is smooth and creamy.

Season the Mixture: Sprinkle in the ground cumin, smoked paprika, and season with salt and pepper to taste. Mix well until all the ingredients are nicely incorporated.

Mix Pasta and Sauce: Add the cooked elbow macaroni into the creamy cheese sauce, stirring thoroughly to ensure that each piece of pasta is evenly coated with the delicious sauce.

Prepare Baking Dish: Preheat your oven to 375°F (190°C). Grease a mini muffin tin or baking dish with cooking spray or a drizzle of olive oil to prevent sticking.

Fill the Muffin Tin: Using a tablespoon, scoop the creamy pasta mixture and fill each cavity of the prepared muffin tin to the brim. If you like a bit of extra crunch, sprinkle breadcrumbs evenly over the top of each filled cavity.

Bake: Carefully place the filled muffin tin in the preheated oven and bake for about 15-20 minutes, or until the tops are golden brown and crispy.

Cool and Garnish: Remove the bites from the oven and allow them to cool for a few minutes. Gently pop them out of the muffin tin and transfer them to a serving platter. Garnish the bites with freshly chopped cilantro for an added burst of flavor and color.

Serve: Treat yourself and those around you to these delightful Creamy Green Chili Pasta Bites while still warm, whether as a snack, appetizer, or a whimsical side dish!
