1 lb (450 g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (10 oz) diced green chilies (mild or hot, based on your spice preference)

1 cup heavy cream

1 cup chicken broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup freshly grated Parmesan cheese

Fresh cilantro or parsley, chopped (for garnish)

Lime wedges (for serving)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add your fettuccine (or chosen pasta), stirring occasionally, and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside, drizzling a little olive oil to prevent sticking if desired.

    Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced chicken. Season generously with salt and pepper. Cook the chicken for about 5-7 minutes, stirring occasionally, until the pieces are golden brown and fully cooked through. Remove the chicken from the skillet and set it aside on a plate.
