Ingredients

12 ounces penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

6 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

¼ teaspoon red pepper flakes (optional for heat)

Zest of 1 lemon

Fresh lemon juice (from about ½ lemon)

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Pasta:

    - In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until it reaches an al dente texture.

      - Once cooked, drain the pasta, but be sure to reserve about ½ cup of the pasta water. Set the pasta aside.

        Sauté the Garlic:

          - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté it for about 1-2 minutes until it becomes fragrant, making sure to stir frequently to prevent burning.

            Add the Spinach:

              - Stir in the roughly chopped spinach, cooking it while stirring often until it wilts down, which should take about 3-4 minutes.

                Prepare the Cream Sauce:

                  - Pour the heavy cream into the skillet with the spinach and garlic, and stir to combine thoroughly. Gradually sprinkle in the grated Parmesan cheese while continuously stirring until the cheese melts and the sauce becomes creamy.

                    - If you find the sauce is too thick, add a splash of the reserved pasta water until you achieve your desired consistency.

                      Season the Sauce:

                        - Enhance the flavor by adding salt, black pepper, red pepper flakes (if using), lemon zest, and fresh lemon juice into the sauce. Mix well to ensure all ingredients are incorporated evenly.

                          Combine Pasta and Sauce:

                            - Add the drained penne pasta to the skillet, tossing it in the creamy garlic spinach sauce until every piece is well coated. Allow the mixture to cook on low heat for an additional 2 minutes, which will help the pasta absorb the wonderful flavors of the sauce.

                              Serve:

                                - Plate the creamy garlic spinach penne in individual serving dishes. For a beautiful presentation, garnish with fresh basil leaves, additional grated Parmesan cheese, and a sprinkle of lemon zest for a vibrant finish.
