Creamy Cajun Chicken Bowtie Pasta

1 lb boneless, skinless chicken breasts, cut into strips

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup freshly grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add the bowtie pasta and cook according to the package instructions until al dente, typically around 8-10 minutes. Once cooked, drain the pasta in a colander and set aside.

    Season the Chicken: In a mixing bowl, combine the sliced chicken breasts with the Cajun seasoning. Toss well until the chicken is evenly coated with the spice mix.

      Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken strips to the skillet. Sauté for about 5-7 minutes, or until the chicken is golden brown and fully cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.

        Sauté the Vegetables: In the same skillet, add the finely chopped onion and diced red bell pepper. Cook for about 4-5 minutes, stirring occasionally, until the onion becomes translucent and soft. Stir in the minced garlic and continue to cook for an additional minute until fragrant.
