2 ripe avocados, pitted and peeled

2 cloves garlic, peeled

1/4 cup fresh basil leaves, plus extra for garnish

1/4 cup freshly squeezed lemon juice

1/4 cup extra virgin olive oil

Salt and freshly cracked black pepper, to taste

1/4 cup grated Parmesan cheese (substitute with nutritional yeast for a vegan option)

12 oz pasta of your choice (spaghetti, fettuccine, or penne)

Cherry tomatoes, halved (for garnish)

Cook the Pasta: Fill a large pot with salted water and bring it to a rolling boil. Add your preferred pasta and cook according to the package directions until it reaches an al dente texture. Before draining, reserve about 1 cup of the pasta cooking water. Drain and set the pasta aside.
