For the Strawberry Layer:

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened to room temperature

1 cup granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

2 tablespoons milk

For the Frosting:

1 cup unsalted butter, softened to room temperature

4 cups powdered sugar

1/4 cup heavy cream

2 teaspoons vanilla extract

Pinch of salt

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare three 8-inch round cake pans by greasing them thoroughly and lining the bottoms with parchment paper for easy removal.

Make the Vanilla Layer: In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. In a separate large bowl, cream together the softened butter and granulated sugar using an electric mixer until the mixture is light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. Gradually incorporate the flour mixture and milk into the batter, mixing just until combined. Pour the vanilla batter into one of the prepared cake pans.

Make the Chocolate Layer: In another medium bowl, combine the flour, cocoa powder, baking powder, and salt. Follow the same process used for the vanilla layer: cream the butter and sugar until fluffy, add the eggs and vanilla, then mix in the dry ingredients and milk. This chocolate batter should then be poured into the second prepared cake pan.

Make the Strawberry Layer: In a clean mixing bowl, whisk together the flour, baking powder, and salt. In another large bowl, beat the softened butter and sugar together until creamy. Add the eggs and vanilla extract, mixing thoroughly. Gently fold in the strawberry purée and milk until the mixture is smooth. Pour this strawberry batter into the final prepared cake pan.

Bake the Layers: Carefully place all three cake pans into the preheated oven. Bake for approximately 25-30 minutes, or until a toothpick inserted into the center of each layer comes out clean. After baking, allow the cakes to cool in their pans for about 10 minutes. Then, gently remove them from the pans and transfer to wire racks to cool completely.

Make the Frosting: In a large mixing bowl, beat the softened butter until it becomes creamy and smooth. Gradually add in the powdered sugar, alternating with the heavy cream, and mix until the frosting reaches a smooth consistency. Stir in the vanilla extract and a pinch of salt and combine well.

Assemble the Cake: Once all the layers are completely cooled, start by placing the vanilla layer on a serving plate. Spread a generous layer of frosting on top. Next, position the chocolate layer on top of the vanilla layer and frost its surface. Finally, add the strawberry layer and evenly cover the entire cake with frosting.

Decorate and Serve: With any remaining frosting, create decorative swirls and peaks on top of the cake. For an extra touch, you may top the cake with fresh strawberries or chocolate shavings. Slice the cake and share this delightful cozy Neapolitan cake with family and friends!
