8 oz spaghetti

1 lb ground beef or Italian sausage

1 small onion, finely diced

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 can (15 oz) tomato sauce

2 tsp dried basil

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional, for heat)

2 cups ricotta cheese

1 large egg

3 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Fresh parsley or basil, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). This will ensure your casserole cooks evenly.

    Cook the Spaghetti: In a large pot, bring water to a boil and season it generously with salt. Add the spaghetti and cook according to the package instructions until al dente – typically about 8-10 minutes. Once done, drain the spaghetti and set it aside.

      Brown the Meat: In a large skillet over medium heat, add your choice of ground beef or Italian sausage. Use a spatula to break it apart as it cooks, stirring occasionally until it's well-browned. Once browned, drain any excess grease.

        Sauté the Vegetables: Add the finely diced onion to the skillet and sauté for about 3-4 minutes until it becomes tender and translucent. Toss in the minced garlic and continue to cook for another minute, allowing the garlic to release its aromatic fragrance.

          Make the Sauce: Pour in the crushed tomatoes and tomato sauce, then add the dried basil, oregano, salt, black pepper, and red pepper flakes if you like a bit of spice. Stir everything together, bring it to a gentle simmer, and let it cook for about 10 minutes, stirring occasionally to develop the flavors.

            Prepare the Cheese Mixture: In a separate mixing bowl, combine the ricotta cheese and the egg. Add in 1 cup of the shredded mozzarella cheese and half of the grated Parmesan cheese. Mix well until all the ingredients are fully integrated and creamy.

              Layer the Casserole: Grease a 9x13 inch baking dish with cooking spray or olive oil. Spread half of the cooked spaghetti evenly across the bottom. Top this layer with half of the meat sauce, ensuring it's spread out. Then, dollop the ricotta cheese mixture evenly over the meat sauce. Repeat the layers with the remaining spaghetti, followed by the rest of the meat sauce. Finish by sprinkling the remaining mozzarella and Parmesan cheese over the top.

                Bake: Cover the baking dish tightly with aluminum foil to retain moisture, and place it in the preheated oven. Bake for 25 minutes. After this time, carefully remove the foil and bake for an additional 15 minutes until the cheese on top is golden brown and bubbling.

                  Garnish & Serve: Take the casserole out of the oven and allow it to cool for about 5-10 minutes. This will make it easier to cut. If desired, garnish with freshly chopped parsley or basil for a pop of color and flavor. Slice into squares and serve warm.
