Ingredients

1 cup warm milk (heated to 110°F)

2 ½ teaspoons active dry yeast

¼ cup granulated sugar, divided (plus 1 tablespoon for yeast)

4 cups all-purpose flour

½ teaspoon salt

1 teaspoon pumpkin spice

½ cup pumpkin puree

2 tablespoons unsalted butter, melted

1 egg, beaten (for egg wash)

½ cup coarse sea salt (for topping)

1 cup granulated sugar (for cinnamon sugar coating)

2 tablespoons ground cinnamon

Instructions

Activate the Yeast: In a large mixing bowl, combine the warm milk with 1 tablespoon of the granulated sugar and sprinkle the yeast on top. Allow it to sit undisturbed for 5-10 minutes, or until the mixture becomes frothy.

Prepare the Dough: In a separate bowl, whisk together the all-purpose flour, salt, and pumpkin spice until evenly combined. In the yeast mixture, stir in the melted butter and pumpkin puree. Gradually add the flour mixture to the wet ingredients, mixing until a soft and slightly sticky dough begins to form.

Knead the Dough: Place the dough on a lightly floured surface. Knead it for about 5-7 minutes, until it is smooth and elastic. If the dough feels too sticky, sprinkle a little more flour onto the surface and continue kneading.

First Rise: Transfer the kneaded dough to a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour, or until it has doubled in size.

Shape the Pretzels: Preheat your oven to 425°F (220°C). Once the dough has risen, punch it down gently to release any air. Divide the dough into 8 equal pieces. Roll each piece into a long rope, about 24 inches in length, and twist it into a pretzel shape.

Boil the Pretzels: In a large pot, bring 10 cups of water to a boil, then carefully stir in the ½ cup of baking soda. Boil each pretzel for approximately 30 seconds. Use a slotted spoon to remove them and place them on parchment-lined baking sheets.

Egg Wash and Toppings: Brush each boiled pretzel with the beaten egg to give them a beautiful golden color when baked. Sprinkle a generous amount of coarse sea salt over the top of each pretzel.

Bake: Transfer the pretzels to the preheated oven and bake for 12-15 minutes, or until they are golden brown and slightly puffed.

Cinnamon Sugar Coating: While the pretzels bake, mix the 1 cup of granulated sugar and 2 tablespoons of ground cinnamon in a shallow bowl and set aside.

Coat the Pretzels: Once the pretzels are baked, immediately brush them with melted butter while they are still warm. Roll them in the cinnamon-sugar mixture until they are fully coated.

Cool and Serve: Allow the pretzels to cool slightly before serving. Enjoy them warm for the best flavor and texture!
