2 cups beef broth

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 can (10.5 oz) cream of mushroom soup

1 cup frozen mixed vegetables (peas, carrots, corn)

2 cups shredded cheddar cheese

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it’s ready when your casserole is prepared.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, stirring occasionally, until the onion becomes translucent and fragrant.

      Brown the Beef: Increase the heat slightly and add the ground beef to the skillet. Cook for about 5-7 minutes, breaking it apart with a spatula as it cooks, until browned throughout. If there’s excess fat in the skillet, drain it carefully.
