Cheesy Baked Gnocchi

1 lb (450g) fresh or frozen gnocchi

2 cups marinara sauce (homemade or store-bought)

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cups fresh spinach (or arugula)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil for greasing

Preheat the Oven: Set your oven to 400°F (200°C) to preheat while you prepare the dish.

    Cook the Gnocchi: In a large pot, bring salted water to a rolling boil. Carefully add the gnocchi and cook according to the package instructions. They are done when they float to the surface, typically taking about 2-3 minutes. Drain the gnocchi and set aside.

      Sauté the Spinach: In a skillet over medium heat, drizzle a splash of olive oil. Once hot, add the minced garlic and sauté for approximately 30 seconds until aromatic. Incorporate the spinach, cooking until it has wilted down. Season the mixture with salt, pepper, and the dried oregano for added flavor. Remove from heat and allow it to cool slightly.

        Prepare the Cheese Mixture: In a large bowl, combine the ricotta cheese, half of the shredded mozzarella, and half of the grated Parmesan. Mix these ingredients thoroughly and season them with salt, pepper, and red pepper flakes if you prefer some spice.

          Combine Ingredients: Gently fold the cooked gnocchi into the cheese mixture, followed by the sautéed spinach. Pour in the marinara sauce and stir everything together until evenly combined.
