Ingredients

1 large head of cauliflower, trimmed and cut into bite-sized florets

2 tablespoons extra-virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly cracked black pepper, to taste

1 cup heavy cream

1 cup freshly shredded sharp cheddar cheese

1/2 cup freshly grated Parmesan cheese

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika

1/2 cup breadcrumbs (optional for a crunchy topping)

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C), ensuring it’s properly heated for even cooking.

Prepare the Cauliflower: In a large mixing bowl, add the cauliflower florets. Drizzle the olive oil over them, then sprinkle with garlic powder, onion powder, salt, and pepper. Toss everything together gently but thoroughly, making sure each floret is evenly coated with the seasonings.

Roast the Cauliflower: Arrange the seasoned cauliflower florets in a single layer on a baking sheet. Roast them in the preheated oven for about 20 minutes, or until they are tender and lightly browned at the edges. Once done, remove from the oven and set aside.

Make the Cheese Sauce: In a medium saucepan set over medium heat, pour in the heavy cream. Gradually stir in the shredded cheddar and grated Parmesan cheese, then add the Dijon mustard and smoked paprika. Continuously stir until the cheeses have melted completely and the sauce is velvety and smooth. Taste and adjust seasoning with salt and pepper as desired.

Combine Cauliflower and Sauce: In a large baking dish, combine the roasted cauliflower with the creamy cheese sauce. Gently mix to ensure that each piece of cauliflower is generously coated in the sauce.

Add Breadcrumbs (Optional): If you enjoy a crunchy topping, evenly sprinkle the breadcrumbs over the cauliflower and cheese mixture for added texture.

Bake: Place the baking dish in the oven and bake for an additional 20-25 minutes, or until the top is beautifully golden and bubbling with deliciousness.

Garnish and Serve: Once baked to perfection, remove the dish from the oven and let it cool for a few minutes. Before serving, garnish with a sprinkle of freshly chopped parsley for a fresh touch.
