Cheesy Bacon & Potato Casserole

Ingredients
  

4 cups of cubed potatoes (approximately 4 medium-sized potatoes)

6 strips of bacon, diced

1 medium onion, chopped

2 cloves of garlic, minced

1 cup of grated cheddar cheese

1 cup of sour cream

1 cup of milk

1 teaspoon of salt

½ teaspoon of black pepper

½ teaspoon of paprika

½ teaspoon of dried thyme

1 cup of grated mozzarella cheese

¼ cup of chopped fresh chives (for garnish)

Instructions
 

Begin by preheating your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

    In a large saucepan, bring salted water to a boil and then add the cubed potatoes, cooking for around 10 minutes until they are just tender. Drain and set them aside.

      In a frying pan over medium heat, fry the diced bacon until it becomes crispy. Use a slotted spoon to transfer the bacon onto paper towels, leaving the bacon fat in the pan.

        Add the chopped onion to the same pan and sauté for approximately 5 minutes, or until they become tender. Incorporate the minced garlic and continue to cook for an additional minute until it's fragrant.

          In a sizable mixing bowl, combine the drained potatoes, crispy bacon, sautéed onions, and garlic, along with the grated cheddar cheese, sour cream, milk, salt, black pepper, paprika, and thyme. Stir everything together until the potatoes are well-coated.

            Transfer the potato mixture into the pre-greased baking dish, spreading it out evenly.

              Top it off by sprinkling the grated mozzarella cheese across the surface of the casserole.

                Place it in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted, bubbly, and lightly browned.

                  Once baked, take it out of the oven and allow it to cool for a few minutes. Garnish with freshly chopped chives right before serving to add a lively flavor.
