Ingredients

3 cups all-purpose flour

1 packet (2 ¼ teaspoons) active dry yeast

1 cup warm milk (approximately 110°F)

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

1 teaspoon salt

1 large egg

1 cup sharp cheddar cheese, shredded

1 cup roasted hatch green chilies, diced (can use fresh or canned)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil (for greasing the bowl)

Optional: extra shredded cheddar cheese for topping

Instructions

Activate the Yeast: In a small bowl, combine the warm milk and granulated sugar. Gently sprinkle the active dry yeast over the surface of the milk. Let this mixture rest for about 5-10 minutes until it becomes frothy, indicating the yeast is active.

Make the Dough: In a large mixing bowl, whisk together the all-purpose flour and salt. Once the yeast mixture is frothy, pour it into the flour mixture along with the melted butter and the egg. Stir together until a sticky dough begins to form.

Knead the Dough: Lightly flour a clean workspace. Turn the dough out onto this floured surface and knead it for about 5-7 minutes. Continue kneading until the dough is smooth and elastic. If the dough feels too sticky, dust a bit more flour on your hands or the surface as needed.

Add Fillings: Once kneaded, incorporate the shredded cheddar cheese, diced hatch chilies, garlic powder, and onion powder into the dough. Gently knead again until all ingredients are evenly distributed throughout the dough.

First Rise: Lightly grease a large bowl with olive oil. Place the dough inside the bowl, turning it to ensure it is coated with oil. Cover the bowl with a clean kitchen towel or plastic wrap, and set it in a warm location to rise for about 1 hour, or until doubled in size.

Form the Rolls: After the dough has risen, gently punch it down to release any air. Transfer the dough to a floured surface and divide it into 12 equal portions. Roll each piece into a ball and place them snugly in a greased 9x13-inch baking dish or a round cake pan.

Second Rise: Cover the formed rolls with a clean towel and allow them to rise again for 30-45 minutes, or until they appear puffy. Meanwhile, preheat your oven to 350°F (175°C).

Bake: If you like, top the rolls with additional shredded cheese before placing them in the oven. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the rolls are fully cooked through.

Cool and Serve: Once baked, allow the rolls to cool in the pan for about 5 minutes before carefully transferring them to a wire rack. Serve warm and enjoy pulling apart the rolls to reveal the cheesy and spicy filling inside!
