Ingredients

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened to room temperature

1 cup granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

½ cup buttermilk, at room temperature

1 cup peeled and diced Granny Smith apples

½ teaspoon ground cinnamon

½ cup caramel sauce (plus extra for drizzling)

Instructions

Preheat the oven: Set your oven to 350°F (175°C) and prepare a standard cupcake pan by lining it with paper cupcake liners.

Prepare dry ingredients: In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon until evenly blended. Set this mixture aside for later use.

Cream butter and sugar: In a large mixing bowl, use an electric mixer on medium speed to beat the softened butter and granulated sugar together. Continue mixing until the mixture becomes light and fluffy, about 3 minutes.

Incorporate eggs and vanilla: Add the eggs to the butter and sugar mixture one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract until well combined.

Combine wet and dry ingredients: Gradually add the flour mixture to the creamed mixture, alternating with the buttermilk. Start and finish with the flour mixture, mixing just until combined to avoid overmixing.

Fold in apples: Using a spatula, gently fold in the diced Granny Smith apples, making sure they are evenly distributed throughout the batter.

Fill the cupcake liners: Spoon the batter into the prepared cupcake liners, filling each liner approximately two-thirds full to allow space for rising.

Bake: Place the cupcake pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Cool the cupcakes: Once baked, let the cupcakes cool in the pan for about 5 minutes. Afterward, carefully remove them and transfer to a wire rack to cool completely.

Frosting (optional): For a decorative touch, pipe a swirl of whipped cream or cream cheese frosting on top of each cooled cupcake. Drizzle additional caramel sauce over the top for an indulgent finish.

Serve and enjoy: Present your delightful Caramel Apple Cupcakes on a decorative plate, garnished with a sprinkle of cinnamon or extra apple slices if desired. Enjoy with an extra drizzle of caramel sauce for a sweet treat!
