Ingredients

4 large ripe tomatoes, diced into small cubes

2 cloves of garlic, minced finely

1/4 cup fresh basil leaves, chopped

1/4 cup balsamic vinegar

2 tablespoons extra virgin olive oil

1 teaspoon honey or maple syrup (optional, for sweetness)

Salt and pepper, to taste

1 French baguette or Italian bread, sliced into 1/2-inch thick pieces

1 cup fresh mozzarella cheese, diced (optional for added creaminess)

Balsamic glaze for drizzling (optional, for elegance)

Instructions

Prepare the Tomato Mixture: In a large mixing bowl, combine the diced tomatoes, minced garlic, and chopped basil. Drizzle the balsamic vinegar and extra virgin olive oil over the ingredients. If desired, add honey or maple syrup to introduce a hint of sweetness. Season with salt and pepper to taste. Stir gently to mix all the components together, then set the bowl aside to marinate for at least 15-20 minutes. This resting time allows the flavors to combine beautifully.

Toast the Bread: Preheat your oven to 400°F (200°C). On a baking sheet, arrange the slices of baguette or Italian bread in a single layer. Lightly brush each slice with olive oil to give them a golden crisp. Place the baking sheet in the preheated oven and toast the bread for about 5-7 minutes, or until the slices are golden brown and crispy. Watch them closely to avoid burning!

Assemble the Bruschetta: Once the bread is toasted, take it out of the oven and allow it to cool slightly. If using mozzarella, place a piece of diced mozzarella onto each slice of toasted bread. Generously spoon the marinated tomato mixture over the mozzarella-topped bread, ensuring each piece is lavishly adorned with the vibrant mixture.

Garnish & Serve: For a finishing touch, drizzle some balsamic glaze over the assembled bruschetta just before serving. This adds a rich sweetness and visual appeal. Serve the bruschetta warm, so the contrast between the crispy bread and juicy topping is delightful.

Enjoy: This refreshing appetizer is ideal for gatherings, parties, or simply as a delicious snack to brighten your day!
