Air Fryer Fall Harvest Veggie Wraps

1 cup butternut squash, peeled and chopped

1 cup Brussels sprouts, halved

1 cup carrots, cut into slices

1 tbsp olive oil

1 tsp maple syrup

1/2 tsp ground cinnamon

1/2 tsp sea salt

1/4 tsp black pepper

4 whole wheat tortillas

1/2 cup hummus

1/2 cup fresh spinach leaves

1/4 cup crumbled feta cheese (optional)

Instructions
 

Begin by preheating your air fryer to 375°F (190°C).

    In a sizable mixing bowl, combine the chopped butternut squash, halved Brussels sprouts, and sliced carrots.

      Drizzle the olive oil and maple syrup over the vegetables, followed by a sprinkle of cinnamon, salt, and black pepper. Toss until all the ingredients are evenly coated.

        Arrange the seasoned veggies in the air fryer basket in a single layer. Cook them for approximately 15-18 minutes, shaking the basket halfway through to promote even cooking. The vegetables should become tender and slightly crispy.

          While the vegetables are cooking, get your wraps ready. Lay a whole wheat tortilla flat on a clean surface.

            Generously spread hummus over the tortilla, ensuring to leave about an inch of space from the edges.

              After the veggies are cooked, take them out of the air fryer and let them cool for a few minutes.

                On top of the hummus, add a handful of spinach leaves, and then pile on a serving of the roasted vegetables.

                  If desired, sprinkle the crumbled feta cheese on top for an extra burst of flavor.

                    Carefully fold the sides of the tortilla inward, then roll it from the bottom up while keeping the filling snug.

                      Place the wrapped tortilla seam-side down in the air fryer basket and cook at 375°F (190°C) for another 3-5 minutes, until the wrap becomes slightly crispy.
